Chateau Bubba

Chateau Bubba

Fine Texas Wine

Chateau Bubba was originated by our best friend and business partner of some 30 years, Joe Bradberry. Joe was a bigger than life kind of guy. He was well traveled and knew something about everything. He was a connoisseur of many things and passionate about his wines. He laughed and said no matter where his travels took him, people would automatically assume he was a ‘Bubba’ when they learned he was from Texas. So he thought it would be fun to have a ‘Chateau Bubba’ label. A friend ran with the idea and created the label, and then Joe and I decided to launch it through Cattails.

Be it cruel, as life sometimes is, Joe died a short time later before we could realize our infamous labeling idea. So, I took it upon myself to make Chateau Bubba a reality, and not just some fond memory of past friendships. With the help of my husband, a lawyer by education and a turf farmer by trade, we filed a Federal trademark and were granted the registered mark.

I found a boutique winery that would do a private label and was told that I needed to name the wines. So on the way home, driving along that Blue Water Highway from Galveston to Surfside, Joe and I brainstormed the names that ‘Bubba’ would have chosen for his wines. We thought that Bubba would name the Pinot Grigio ‘Tight Fittin White’ only because he couldn’t keep his eyes off those girls in tight fittin’ jeans at the local honky tonk. Then we addressed the two red wines. The Malbec was easy; it was red so ‘Redneck Rojo’ had a ring to it. That left the Cab/Merlot blend. I called his son Jeff and asked him to name this wine. I told him that it was a young wine, but one that Joe would approve of, and that it would pair well with a steak. He said he would call me back the next day. And he did, asking “How about ‘Red Angus Red’?” That way Bubba knows which red wine goes with a steak. Needless to say, these three wines were the talk of the store. And after several months and many requests for a sweet wine, I added a Peach Chardonnay to the Bubba collection. Joe and I already had the name in my file. A sweet peachy wine had to be named ‘Moonlight Mama’! Now this is my top selling wine in the store! Who would have thought?

I know that if Joe were here he would love these Chateau Bubba wines as much as we enjoy honoring the man who originated it. Here’s to you, Joe.

Available Flavors

  • Red Angus Red

A medium bodied red, easy to drink, that can be slightly chilled. Savory fruit aromas combine blueberries with hints of cedar and pepper notes – flavors follow suit with a hint of oak. The wine pairs well with chicken, pork, lamb, and pastas. BUBBA SAYS you haven’t lived until you’ve had this wine with a venison backstrap!

  • Tight Fittin’ White

A succulent introduction hinted by the gentle scent of honey and herbs. This dry straw-colored wine is light yet pleasingly tart with softening hints of green melon. The finish is clean and crisp. It marries well with pastas in cream sauce, fish, and grilled chicken. BUBBA SAYS to try it with the other white meats like fried frog legs or grilled squirrel!

  • Redneck Rojo

This luscious and fruity wine has a rich flavor reminiscent of plums. It is a medium bodied red wine that is perfect for aging. It pairs well with slow cooked red meats or with wild game. BUBBA SAYS it was made for armadillo stew!

  • Moonlight Mama

This Peach Chardonnay is a blend of Chardonnay with its natural affinity to oak. It delivers a crisp astringent bite yet is fresh with an infusion of peach juices to give it that light, yet sweet taste and aroma. Top selling wine at Cattails! BUBBA SAYS pour it over ice cream and forget the cobbler!

  • Hillbilly Blues

This smooth blush wine is gracefully blended with a burst of wild blueberry flavors. It is sweet and exotic with a sophisticated bouquet and still incorporates the refreshing character of white zinfandel. It is the ideal beverage for any casual social event. BUBBA SAYS take it to the beach and have it over some ice in your Sippy cup.
